Maestros del Maguey y Mezcal Mal de Amor is an Oaxacan, Zapotec company, third generation of mezcal masters who grow agaves and produce mezcal under an artisanal process with strict quality standards, guaranteeing an authentic product with exquisite flavors and aromas. Ideal to accompany the stories of a broken heart.
The agave is crushed by a horse-pulled tahona after being slow roasted underground for 4-5 days The fermentation is done with wild yeast in open air (completely natural fermentation) which takes between 5-10 days The stills are around 250 liters and are heated by direct fire. Everything is double distilled (copper pot distillation) then rested in glass anywhere from 6 months to 4 years. This allows for the flavors to really come out after some settling.
Located in the "World Capital of Mezcal" Santiago Matatlán, Oax.
Tasting Notes:
Lemony and herbaceous on the nose. The palate tastes of candied green pepper and light smoke. The finish is surprisingly long as the flavors slowly fade into a wisp of smoke.
