Mezcal El Samaritano Pechuga de Pavo y Frutas is produced by Maestro Mezcalero Don Ambrosio Martinez Blas in Santiago Matatlan, Oaxaca using turkey breast and various local fruits (Apple, Pineapple, Mango & Guava). The harvested plants are cooked in an underground oven for 4 days, crushed by a horse-drawn tahona, fermented in wooden vats, and double-distilled in copper pots.
