Pulque is an alcoholic beverage made from the fermenting of the agave sap. Juerte Destilado de Pulque brings back the historical process of “destilados de pulque,” which dates back to the early days of the Spanish colonial era and distilled spirits in Mexico.
Juerte Destilado de Pulque is produced by Gerónimo Rosainz. The story goes that he was told about destilado de pulque by his grandmother, but it wasn't until he married a chemical engineer in the mid-90s that he actually began the process of learning how to produce it himself. His wife helped him procure the necessary equipment, and together they decided to re-initiate this centuries-old tradition and began selling their destilado de pulque in their village in northeast Tlaxcala.
This pulque distillate uses agave salmiana grown in the eastern Mexico state of Tlaxcala, which is renowned for its pulque.
The aguamiel (agave sap) of the maguey pulquero (agave Salmiana) is fermented and then distilled. A big hole is cut into the top of the pia when the Salmiana reaches maturity. The natural reaction of the plant is to exude aguamiel into the hole.
Rather than the traditional milky appearance from fermenting, you get a clear, smooth spirit.
